My supper was "really" good! (who says you can't eat awesome on a food allergy diet?)
I had mixed greens- kale and spinach that were sauteed in olive oil. (I prefer to use coconut oil when cooking, but we were seeing how it would affect me if I didn't use it.)
I also made a really yummy combination of steamed broccoli, brown rice and Alaskan salmon, a drizzle of extra virgin olive oil and a pinch of natural sea salt was all it needed.
A few hours prior to dinner I had made coconut Popsicles- a great way to get your young coconut in if the taste is somewhat strange, or you can't manage a whole one by yourself.
All I did was pour my coconut water into small cups, pop some foil or plastic wrap on them, and just stick some toothpicks, or craft sticks in~~so easy!
They were completely frozen by supper time, and I just grabbed one of them after dinner for a cool, refreshing desert.
