Tempting Tacos!

Tacos are a favorite meal in my house, and don't worry, there is a tasty vegetarian option for those of you who don't eat meat! 

Since I am gluten intolerant I use a couple out of the ordinary products that might be hard to find in a regular grocery store. I buy most of these things like the rice tortilla's and vinegar free hot sauce at our favorite health food store. 

Tacos:

Ingredients:
2 Brown rice tortillas--warmed
1/2 C. Vegetarian refried beans, or black beans
1/2 C. Shredded goat cheese
1 C. Shredded romaine lettuce
2-3 TB. Of Organic vinegar free hot sauce
1/4 C. shredded carrot

Heat up your rice tortillas, and then spread on the refried beans. Sprinkle on the goat cheese, lettuce, and shredded carrot and then roll up into taco form.  I am not partial to tomatoes and guacamole, but if you desire them, add them onto your taco too!  Heat in your oven at 350º
and cook until cheese is melted. Add on your hot sauce and enjoy!
